Baleen Restaurant Serves up Thanksgiving Feast at Inn and Spa at Loretto
New Executive Chef Brian Cooper Debuts with Special Holiday Menu
SANTA FE, NM - Nov. 12, 2007 – Inn and Spa at Loretto's new Executive Chef Brian Cooper is serving up a Thanksgiving feast with all of the traditional fixings plus entrées that offer a creative twist on time-honored holiday selections.
The three-course holiday menu features Duck Confit Gnocchi and Kabacha Squash Soup with Lobster Cakes among other choices. Main course items include Ancho and Shallot Crusted Beef Tenderloin, Aged LaMont Ranch Buffalo and Morel Crusted Georges Bank Scallops. For guests in search of a traditional Thanksgiving plate, Chef Cooper has planned a Traditional Turkey entrée with stuffing, mashed potatoes, green beans, sweet potato flan, cranberry relish and turkey gravy. Sweet treats round out the sumptuous menu with Pumpkin Cheesecake, a Pecan Whisky Tart and a Dutch Triple Chocolate Cake.
Entertainment will be provided throughout the evening by Native American singer-songwriter Matthew Andrae, a Santa Fe locals favorite. Andrae performed for millions of people at the 2002 Winter Olympic Games in Salt Lake City, Utah.
