Strikingly original entrees combining modern New Mexican flavors and indigenous ingredients from local farmer’s markets and boutique farms, is the centerpiece of Baleen Santa Fe’s award-winning cuisine. This sumptuous, signature restaurant, offers a diverse menu of slow-roasted chicken and pork specialties, pan-seared beef and grilled seafood favorites all expertly prepared to reflect the seasonality of ingredients . Guests can enjoy an atmosphere of fine dining, a cozy corner fireplace, and views of the famed Loretto Chapel and Old Santa Fe Trail. Both table seating and private booths are available. At dinner, tables are dressed with fine linens and small rustic lantern centerpieces. Dinner menu highlights range from Juniper-smoked Duck Breast and Pan-seared Diver Scallops to Braised Kobe Short Ribs and Slow-roasted Local Chicken. A favorite of guests and locals alike, al fresco dining is also offered on the outside patio overlooking the Loretto Chapel (May - October). The lobby lounge and bar offers a comfortable and inviting respite featuring tables crafted of hand-painted wood, pounded copper, and glass tops over Native American drums. Live music is presented in the evenings.
