Since so many people are going gluten free these days I’ve created a delicious gluten free pancake recipe. This is made with almond flour, which is heart healthy, and agave instead of sugar. You are going to love these!
Almond Flour Gluten Free Pancakes
¼ c agave nectar
1 tbs vanilla extract
1½ c blanched almond flour
½ tsp sea salt
½ tsp baking soda
grapeseed oil for sautéing
In a blender or mixer combine eggs, agave, and vanilla. Blend on high until smooth. Add almond flour, salt, and baking soda. Blend again and let batter sit for 15-20 minutes or until thick.
Warm grapeseed oil in large skillet over medium heat and ladle pancake batter onto skillet. (Tip – I use a cast iron skillet, it will create a crunchy outside and fluffy inside. Yum!)
Pancakes will form little bubbles. When bubbles open, flip pancakes over and cook other side. Remove from heat to plate and repeat process with remaining batter, adding more oil as needed.
Serve with fruit, maple syrup, or a jam of your choice. Enjoy!

We made The Inn and Spa our destination for a long weekend trip to Santa Fe. We've walked by the property on other visits to Santa Fe and finally decided to stay even though other hotels were less expensive. We checked in earlier than official hotel policy suggested but the front desk staff found a room for us and we settled in and began exploring the property and the area. Our room was comfortable and had a very nice view of the chapel and the cathedral areas from our balcony. We spent part of an afternoon at the pool and were pleased with the beverage service and the ambience of their courtyard. Despite construction in the area and a busy city street next to the property, it was quiet and we had a peaceful night's rest. The location can't be beat and a short walk got us to any and all the attractions and shops we wanted to see. We're not spa fans but we were very pleased with the atmosphere and the customer service provided by the staff at this very nice property.

The Inn and Spa at Loretto is pleased to announce our 2013 Santa Fe Opera Package celebrating the longstanding summer tradition of outstanding operatic performances at The Santa Fe Opera.
