Restaurant Recipe: Smoked Salmon, Cornmeal Pancakes, Caviar, Crème Fraishe and Scallion

Join Executive Chef Brett Sparman in celebration of ingredients that allow him to create dishes that delight and inspire. The Study Of culinary series features an in-depth exploration of ingredients with the chefs of The Destination Culinary Collection of Destination Hotels & Resorts. Each quarter, Destination will unveil a new gastronomic topic for our chefs to examine through cooking demonstrations, educational lectures, innovative recipes, or sumptuous tastings.

Smoked Salmon, Cornmeal Pancakes, Caviar, Crème Fraishe and Scallion
Makes 15+ Pancakes

1 lb. smoked salmon
15 cornmeal pancakes, recipe below
1 c caviar
1 c crème fraishe
1 c green onions, finely chopped

Cornmeal Pancakes    
1.5 c all-purpose flour
1.5 c yellow cornmeal
3 tbs sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2.5 c buttermilk
4 large eggs
1.5 c melted butter

Sift first six pancakes ingredients into large bowl.  Whisk buttermilk, eggs and melted butter in medium bowl until completely blended. Slowly add buttermilk mixture to dry ingredients and whisk until smooth.

Heat non-stick pan over medium heat with little butter and add dollop of batter.  Cook until golden brown on each side.

Plating

Place dollop of crème fraishe on each pancakes and top with smoked salmon.  Finish the plate with spoonful of caviar and green onions and enjoy!

Guest Review: A Beautiful Place to Stay

“The Inn and Spa at Loretto is an amazing hotel, it is full of mystery and history.  This beautiful hotel has many corners of unique shops and wonderful things to see and be a part of. The Living Room is warm and inviting.  The service that I received from Aimee was impeccable.  Luminaira Restaurant is also unbelievable, I highly recommend the pasta.  I couldn't ask for nicer people at the front desk, I was greeted with kindness and smiles. The room is wonderful.  The bed very comfy and the warm tone colors made for a very relaxing stay.  I also loved the Loretto Line Tour.  It is a great way to see the city and I now have added more things to see for when I return.  Beautiful Hotel, wonderful city.”

Cocktail Recipe: The Tax-Tini

If you're a procrastinator, you may have put off taxes until the very last minute - in which case; your weekend was spent toiling over documents and forms.  Now it is time to relax! Tonight whip up The Living Room’s Tax-Tini, a mix of Hacienda Gin, Campari, Negori Sake and St. Germain - sure to relieve any residual stress and headaches associated with tax season.  Enjoy!

The Tax-Tini

1 oz. Hacienda had crafted gin
1 oz. Campari
1 oz. Negori sake
1 oz. St. Germain

Muddle three lime wedges and four fresh sage leaves in a cocktail shaker, add remaining equal parts of each spirit.  Shake, strain, and serve in a martini glass with a lime twist.

Cured Salmon, with Mojo Verde, and Smoked Sea Salt
Serves Six

cured salmon, slices (curing recipe below)
1 c mojo verde, (recipe below)
1.5 tbs smoked sea salt
1 c farmer’s micro herb mix olive oil, garnish

Mojo Verde

1.5 avocados, peeled and pitted
1/2 bunch cilantro, chopped
1 garlic cloves
1/4 c fresh lime juice
1/2 tsp sherry vinegar

Place cilantro, lime juice, and garlic in blender.  Puree until smooth, add avocado.  Puree until smooth. Transfer to bottle or pastry bag.  Puree should be bright green.

Salmon Cure

1 medium sized salmon filet
1/2 c sugar
3 c kosher salt
1.5 tbs dry parsley
1.5 tbs cracked coriander seeds
¼ c tequila

Mix all ingredients together.  Set aside.

To cure the salmon -

Ask your fish monger to skin salmon, remove blood line, and cut in in 8 ounce portions.  Cover salmon with salt cure and let stand for 3 hours.  Remove from salt, rinse with cold water, dry, and wrap in cheese cloth in refrigerator for at least one day.

Remove wrapping and scrape off excess cure mix. Slice thinly on the bias and serve with dollop of Mojo Verde and garnish with smoke sea salt and olive oil.

Guest Review: Exceptional

"My husband and I had been to Santa Fe several years ago and stayed right on The Plaza; we wanted to try another hotel but still be close to the historical downtown. Family recommended The Inn and Spa at Loretto and everyone from the valet staff to housekeeping could not have been more accommodating.

We decided to eat in the lobby bar our first night and both had incredible dishes. We enjoyed the food so much we ended up eating dinner in the main dining room the next night and our final night back at in the lobby bar. The wait staff during every meal were attentive to all our needs. Our food was outstanding and presentation beautiful. We will definitely pass on excellent reviews to our family and friends. Can't wait to return to the Inn and to Luminaria."
