Meet Newman - Santa Fe's Harris Hawk
The Inn and Spa at Loretto, Santa Fe, would like to introduce you to Newman. Newman is our resident Harris Hawk. Newman has been staying with us for several weeks, and we are excited about having him with us.
The Harris Hawk lives in sparse woodland and semi-desert, as well as marshes (with some trees) in some parts of its range, including mangrove swamps, as in parts of its South American range. Harris Hawks are permanent residents and do not migrate. Their diet consists of small creatures including birds, lizards, mammals, and large insects. Because it will hunt in groups, the Harris Hawk can also take down larger prey, such as jackrabbits.

A Great Location
My family and I recently had the pleasure of staying at The Gant during our first visit to Colorado. We stayed in a two-bedroom, two-bathroom unit that was just perfect in every way. It had flat-screen TV's in the bedrooms and one in the living area, the furniture and beds were comfortable and the kitchen was very well equipped. The condo and surrounding grounds were neat, clean and well maintained. The staff was very pleasant and made us feel welcome from the moment we arrived. Although a shuttle service was available, we found it to be just a short walk into town. My only regret is we were only able to stay one night due to previously scheduled events but if we are ever back in Aspen I 'm sure we will choose The Gant.

Luminaria Restaurant hosts Tablas Creek Vineyard
In celebration of Santa Fe's Wine & Chile Fiesta, Chef Brian Cooper and Tablas Creek Vineyard's General Manager, Jason Haas will be preparing a tantalizing dinner menu taking place on September 23, 2010 in Luminaria Restaurant.
The evening begins at 6:00pm with a reception featuring scrumptious hors d'oeuvres paired with Cotes de Tablas Blanc. Dinner begins with a first course of chilled sopa verde and lump crab tower paired with Esprit de Beaucastel Blanc. The second course includes pan roasted guinea fowl, foie gras and roasted fig butter, brioche, lentil stew paired with Cotes de Tablas. Next Chef features New Mexico mixed grill, buffalo flat iron, and talus wind lamb rack paired with Esprit de Beaucastel. The final course pairs apricot mascarpone Neapolitan with Vin de Paille "Quintessence". Join Jason and Chef Cooper for an evening of wonderful food, wine education and conversation.

Summer Grilling to Spice Up Mealtime
American Fitness just released a wonderful feature article by Elise Oberliesen – Summer Grilling to Spice Up Mealtime; Healthy fare starts in the backyard. Long summer days drenched in sunlight make the backyard grill a hot spot for dishin up healthy fare. Meals are made in minutes. Elise interviewed Luminaria's Chef Brian Cooper for great ideas about eating healthy during the summer.

Tired of the same old grilling routine? Then take it from the pros and consider a few pointers. During the busy season, Executive Chef Brian Cooper spends many hours preparing meals for hungry guests at Luminaria, a New Mexico restaurant known for its bold southwestern flare. With signature dishes like seared scallops, he knows how to punch up the flavor quotient.
Though he admittedly enjoys a great tasting ribeye, Cooper realizes that eating too much red meat and the fat in it can lead to a spare tire and high cholesterol. Now he monitors red meat intake with a once-a-week splurge. With his weight down by 30 pounds, Cooper has reinvented himself and his backyard.
Adding Fish to your Repertoire - The right flavor additions and expert preparation make fish one of Cooper's favorites now. "I like ahi tuna, on a smoking hot grill.” Cooper said. But watch the clock because too much flame dishes up parched, "gritty" fish, he adds. Salmon and halibut withstand extra time on the fire without risk of that leather jerk-like texture. Use a medium heat for halibut, said Cooper. The lower fat content can make a moist filet tough.

Loretto receives Wine Spectator's Award of Excellence
Wine Spectator, America's leading wine appreciation magazine has honored Santa Fe's Luminaria Restaurant & Patio with their "2010 Award of Excellence". The Inn and Spa at Loretto Celebrates Santa Fe's Indian Market
The Inn and Spa at Loretto celebrates the August 21-22 Santa Fe Indian Market - the premier cultural event of the summer and 80-year-old institution that showcases the generations-old crafts of the Native American people. The Market is one of the most acclaimed Native arts displays in the world, and promotes its mission of fostering the cultural preservation, intercultural understanding and provision of economic opportunities for American Indians through excellence in the arts.

Meet Bob Shacochis at Loretto and Garcia Street Books Author Series
The Inn and Spa at Loretto and Garcia Street Books’ Meet the Author series continues this Thursday, August 5th, with National Book Award-winner Bob Shacochis, author of the novel Swimming in the Volcano and the short story collection entitled Easy in the Islands. At this luncheon, you’ll have the opportunity to hear a reading by Bob along with a meet and greet session. Wine Chat with Erika
As you recall from our last chat, I recently attended two seminars hosted by Southern Wine and Spirits in Albuquerque. We talked about sustainable wine growing practices in May, so I wanted to share the second half of the seminar, which was called the "Aroma Wheel of Fortune".
We played this great game where vials of aromas were passed around the room and then a multiple choice question was asked about what aroma was in the vial. It was really hard to believe that the whole room of "Wine Professionals" had difficulty agreeing on whether it was lemon, lime or grapefruit but I have to admit I was questioning myself as well.
We are happy that summer is finally here! We are seeing that our guests are thirsty for white wine as usual this time of year and while a glass of Sauvignon Blanc or Chardonnay are lovely choices we also like to recommend a couple of not so mainstream alternatives. Two of the team's favorites are a beautiful Chenin Blanc - Viognier blend by Pine Ridge and a crisp and refreshing Albarino by Laxas. In our opinion for summer we are not sure we would rather have another grape besides the very popular Spanish Albarino. I personally have never tried one I didn't love.

Heidi Loewen Gallery in Santa Fe featured on Giada's Weekend Getaways
Heidi Loewen, one of The Inn and Spa at Loretto’s Experiential Passport partners, was recently featured on TV in the Santa Fe episode of Giada’s Weekend Getaways. Heidi was teaching Giada De Laurentis how to throw porcelain pottery. Giada’s show is on the Food Network.
Attending a class while visiting Santa Fe is the perfect way to truly experience all that is Santa Fe. The Heidi Loewen Gallery offers classes which demonstrate classical wheel thrown vessels of all sizes. Heidi will make the clay “dance” in sensuous forms while in the squishy state. Students will experience what it is like to throw a bowl in the air and catch it – creating delightful, AMORPHOUS forms, unique as snowflakes. Heidi assures good fun. New Coffee Stand in Santa Fe - Agapao by Luminaria
The Inn and Spa at Loretto is very excited to announce the grand opening of “Agapao by Luminaria”! Located in the Chapel Hallway, Agapao, which in Greek means for Love, will be serving coffee, espresso, cappuccinos, coffee drinks, flavored ice tea, bottled water, Odwalla juice and bars, fresh Danish, muffins, bagels and whole fruit from 7am until 2pm daily. Santa Fe's Luminaria Restaurant presents Southwest-Inspired Sweet Recipe
Luminaria's Pastry Chef, Andrea Clover, is known for her delectable, homemade desserts. Try her recipe for piñon nut brittle at home for an easy-to-make, Southwest-inspired treat.
Simply bring one cup corn syrup, two cups sugar, one and a half cups water and one and a half teaspoons of salt to a boil in a pot. Once the mixture reaches 250°, stir in one cup piñon nuts, one and a half tablespoons butter and three quarters of a teaspoon baking soda. Pour onto a sheet pan sprayed with non-stick cooking spray and spread with gloves that have also been sprayed. Wait until hard, then break or cut into bite size pieces. Enjoy!

Santa Fe, Local Artist, Bruce McIntosh Invites you to a Reception
Santa Fe's own Bruce McIntosh is featuring his Assemblage & Collage Derivatives You Can Live With collection and invites you to his Artist’s Reception on July 13, 2010 from 5 to 7 pm.
Bruce's collection of art that features found materials assemblages and collages is on exhibit in the Santa Fe offices of Wells Fargo Advisors.
"I hope you will be as excited about the pieces as they are working amidst them. More than forty pieces span forty-five years of my work from early torn paper collages through assemblages using found scraps of wood, metal, plastic, rubber, etc. and include many examples of my recent work", states Bruce.
The show is held over through July, 2010. Location Wells Fargo Advisors is on the third floor of the Alpine Sports Bldg., corner of Water and Sandoval in Santa Fe. Entrance at 121 Sandoval St. (West Alameda end of building). Office hours are 9-4, Monday through Friday, except holidays and market holidays.
