Santa Fe Pastry Chef’s High Elevation Baking Secret

The best secret I learned when first moving to New Mexico was a high altitude cooking trick. When I was staging for the first time I was living in Albuquerque, but commuting to Santa Fe each day. I thought to adjust all of my recipes for the altitude in Albuquerque, but didn’t know about the increase in elevation when baking in Santa Fe.

Needless to say, my carefully calculated recipe of brownies exploded in the oven, I was mortified!  Of course,  just as I pulled out the under baked, but burnt brownies from the oven, the Executive Chef ambled around the corner, to my horror.  She said, “Can I tell you a secret? .... Half the sugar.”  

She then explained to me and told me to forget adjusting all recipes by adding flour and eggs.  The culprit is the way the water boils and when baking high sugar recipes ijust splitting the sugar down the middle will work just fine.

Sure enough, I made the same recipe moments later, but this time added half the sugar.  They came out perfect and I couldn’t tell that half the sugar was missing.  I got the job and the Executive Chef said, “Anyone that can come back after something like that was someone that she wanted to work with!”
