Restaurant Recipe: Smoked Salmon, Cornmeal Pancakes, Caviar, Crème Fraishe and Scallion

Join Executive Chef Brett Sparman in celebration of ingredients that allow him to create dishes that delight and inspire. Smoked Salmon, Cornmeal Pancakes, Caviar, Crème Fraishe and Scallion
Makes 15+ Pancakes

1 lb. smoked salmon
15 cornmeal pancakes, recipe below
1 c caviar
1 c crème fraishe
1 c green onions, finely chopped

Cornmeal Pancakes    
1.5 c all-purpose flour
1.5 c yellow cornmeal
3 tbs sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2.5 c buttermilk
4 large eggs
1.5 c melted butter

Sift first six pancakes ingredients into large bowl.  Whisk buttermilk, eggs and melted butter in medium bowl until completely blended. Slowly add buttermilk mixture to dry ingredients and whisk until smooth.

Heat non-stick pan over medium heat with little butter and add dollop of batter.  Cook until golden brown on each side.

Plating

Place dollop of crème fraishe on each pancakes and top with smoked salmon.  Finish the plate with spoonful of caviar and green onions and enjoy!
