Restaurant Recipe: Smoked Salmon Bagel with Green Chile Cream Cheese

Smoked Salmon Toasted Bagel with Green Chile Cream Cheese
Serves Five

5 toasted bagels
16 oz  green chile mousse, recipe below
1 c capers, rinsed
2 c red onions, sliced thin and rinsed in cold water
4 c baby arugula, washed and dried
1 lb smoked salmon, thinly sliced
extra virgin olive oil

Green Chile Cream Cheese Mousse

16 oz cream cheese, softened
1 c roasted green chile
2 c heavy cream
salt and pepper, to taste

In mixer, whisk cream cheese until fluffy on medium speed.  Slowly add heavy cream until cheese is soft and spreadable.  Season light with salt and pepper and fold in green chile until mixed completely.

Plating - Top green chile cream cheese on toasted bagels, set aside.  In mixing bowl toss arugula, red onions, and capers with olive oil and salt to taste.  Top each bagel with salad mix and place on large platter or individual plates.
