Restaurant Recipe: Apple Tart with Vanilla Ice Cream and Cajeta

Destination Hotels & Resorts has challenged their chefs across the country to take part in The Destination Dish. Each month one ingredient is selected for the chefs to create a recipe around the chosen element and to incorporate it into their restaurant menu. Be sure to check our blog each month for a new delicious recipe you can enjoy in the comfort of your own home or in Luminaria.

THIS MONTH'S featured Ingredient is APPLE!!

Apple Tart with Vanilla Ice Cream and Cajeta
Serves 6 people

6 pre-made tart shells
1 recipe apple compote, recipe below
1 c cajeta sauce, available at Latin markets
1 qt vanilla bean ice cream

Apple Carmel Compote

1 c sugar
1 lb Granny Smith apples, peeled and diced
2 oz butter

In a large sauce pan heat sugar until it starts to melt and caramelize.  Add apples and butter, cover and cook slowly for twenty minutes.  Remove from heat and allow to evaporate completely.

Finish the Dish

Place equal amounts of Apple Carmel Compote in tart shells and heat until warmed thoroughly in oven preheated to 350 degrees.  Place generous scoop of ice cream and drizzle with cajeta sauce.
